The Kitchen
We have a few "south of the border" treats for you in the Welcome Home Families kitchen this month.
For a first course to our mexicali meal we have the recipe for Doreen's (now famous since our Party at the Planetarium) homemade SALSA.
Doreen's Fresh Tomato/Avocado Salsa
Take about 2-3 lbs of tomatoes, quarter and seed them, then dice and put in bowl. Chop one avocado and put that in with tomatoes. Finely chop ½ cup of onion (preferably white) and 1 cup fresh cilantro. Stir in one, or more depending on hotness, seeded and chopped jalapeno Chile, or I put ½ jalapeno and ½ Anaheim Chile (my favorite!), onion, cilantro and 2 tsp minced garlic into tomatoes with 2 tsp of sugar and 3 Tbls of fresh lime juice and season with Kosher salt and black pepper.
Doreen's Delicious Mango Salsa
Combine 1 mango, peeled and diced, ½ cup of peeled, diced cucumber, 1 Tbls finely chopped jalapeno, 1/3 cup diced red onion, 1 Tbls lime juice and 1/3 cup roughly chopped cilantro leaves and mix well. Season with Kosher salt and pepper, to taste.

On to the main course. Here at Casa Anderson we usually make this in the oven but we had a busy day recently and tried it in the crock pot. It worked great! Don't forget to experiment. This treat is no candy corn but it does have sweet corn in it:
Mexican Cornbread Casserole
1 1/2 lbs. Ground Beef (or ground chicken or turkey, or shredded chicken or beef, etc.)
1 can Black Beans (or dried beans that have been soaked and cooked)
1 large jar thick & chunky style Salsa
1 container Sour Cream
Shredded Cheddar Cheese (as much as you like)also Monterey Jack or Queso cheese, etc.
1 can Creamed Corn (or fresh or frozen)
1 pkg. Cornbread Mix (or your homemade recipe)
Heat oven according to cornbread mix package or your recipe
Brown ground beef and drain off fat
To ground beef add drained can of black beans and jar of salsa;spread into casserole dish
On top of beef mixture spread sour cream
Top sour cream layer with shredded cheddar cheese
Mix up cornbread recipe as it calls (we use buttermilk) and add can of creamed corn to it
Pour cornbread batter over cheese layer
Bake at temperature and time called for on cornbread package or recipe
If you like it CALIENTE add some hot sauce!
Want a little sweet treat after dinner? No, still not candy corn. Have any left over flour tortillas? Cut them up into bite-sized pieces and drizzle with honey then sprinkle with cinnamon. Bake in the oven until golden brown and crispy. Mucho Delicioso!
